- 2 large pizza bases
- 1/3 cup tomato paste
- 250g cherry tomatoes, chopped
- 6 eggs
- 50g baby spinach leaves
- 100g parmesan cheese, shaved
- Preheat oven to 250°C. Line two large baking or pizza trays with baking paper. Place pizza bases on trays. Spread with tomato paste. Top with tomatoes.
- Crack 3 eggs around the centre of each base. Bake for 10 to 12 minutes or until eggs are just set.
- Top with spinach and parmesan. Season with salt and pepper. Slice and serve.
- 70g (1/4 cup) wholegrain mustard
- 3 tsp honey
- 2 thin & crispy pizza bases, without sauce
- 200g shaved cooked chicken
- 100g brie cheese, thinly sliced
- 1 tbs sesame seeds
- 80g baby spinach leaves, washed, dried
- Preheat oven to 220°C. Combine the mustard and honey in a small bowl and spread over the pizza bases.
- Divide the chicken, brie and sesame seeds between the pizza bases.
- Cook in preheated oven for 10-12 minutes or until the bases are golden and crisp, and the cheese is melted. Serve topped with the spinach leaves.
