Egg, tomato and spinach pizzas

  • 2 large pizza bases
  • 1/3 cup tomato paste
  • 250g cherry tomatoes, chopped
  • 6 eggs
  • 50g baby spinach leaves
  • 100g parmesan cheese, shaved


  1. Preheat oven to 250°C. Line two large baking or pizza trays with baking paper. Place pizza bases on trays. Spread with tomato paste. Top with tomatoes.
  2. Crack 3 eggs around the centre of each base. Bake for 10 to 12 minutes or until eggs are just set.
  3. Top with spinach and parmesan. Season with salt and pepper. Slice and serve.

Chipolata & tomato pizza

  • 1 x 26cm frozen regular crust pizza base (McCain brand)
  • 1 x 140g ctn garlic & herbs tomato paste (Leggo's brand)
  • 1 x 500g pkt extra-lean beef chipolata sausages (Peppercorn brand), cut crossways into 1cm-thick slices
  • 1/3 cup loosely packed fresh basil leaves
  • 120g (1 cup) light shredded mozzarella (Mil Lel brand)
  • 2 tsp olive oil
  • 1 bunch rocket leaves, trimmed, washed, dried


  1. Preheat oven to 220°C. Line a baking tray with non-stick baking paper. Kids' task: Place pizza base on prepared tray. Spread the tomato paste evenly over the pizza base, leaving a 2cm border around the edge. Top with sausage and basil leaves. Sprinkle with cheese and drizzle with oil.
  2. Bake in preheated oven for 15-18 minutes or until the sausage is cooked and pizza base is crisp. Remove from oven. Cut into wedges and top with rocket leaves. Serve immediately.

Cheese & tomato pizza

  • 1 cup plain flour
  • 1 teaspoon dried yeast
  • Pinch salt
  • 2 teaspoons extra virgin olive oil
  • 5 tablespoons warm water
  • Extra flour for dusting rolling pin
  • 140g tub pizza sauce
  • 1 cup grated cheese (1/2 cheddar, 1/2 mozzarella)


  1. Combine the flour, yeast and salt in a bowl. Make a well in the centre of the mixture. Add the oil and water and use a wooden spoon to combine until a dough almost forms.
  2. Turn the mixture out onto a lightly floured surface. Use the palm of your hand to knead the dough for 2-3 minutes or until smooth. Place into a lightly oiled bowl, cover with plastic wrap and set aside for 1 hour, or until the dough doubles in size.
  3. Preheat oven to 240°C. Use your fist to punch down the dough. Knead until smooth. Using a lightly floured rolling pin, roll the dough out until big enough to line a lightly greased 27cm pizza tray.
  4. Spread pizza sauce over pizza, then sprinkle with cheese. Bake for 15-20 minutes or until cheese is golden and the base is crispy.
